These fun and easy plant-based treats will satisfy your sweet tooth and hunger in just one delicious, nutritious bite. Dates with peanut butter are a whole-food snack containing many vitamins and minerals. They also contain protein and healthy fat to balance out the sugar in the dates and help you avoid a blood sugar crash. As with any indulgent treat, enjoy them in moderation and share with your friends!
Ingredients:
- 20 Medjool dates
- 1/3 cup peanut butter (or nut butter of choice)
- 1/4 cup of chocolate
- sea salt
Instructions:
- Line a large baking tray with parchment paper (to ensure dates don't stick).
- Slice open each date and remove the pit. Place on tray.
- Spoon just under 1 teaspoon of peanut butter into the middle of each.
- To make chocolate, microwave for 30 seconds until melted, or melt in a double-boiler. If using pre-made chocolate, break it into pieces and microwave for 30 seconds until melted.
- Allow chocolate to cool slightly and drizzle over dates (or dip dates in chocolate if you're feeling adventurous!). Optionally sprinkle with sea salt.
- Refrigerate until the chocolate has hardened (about 20 minutes).
